Pomfret Fish - 2 pieces
Lakadong Turmeric - ½ a teaspoon
Ing Makhir Ginger - 1 teaspoon
Lemon - 1
Olive Oil - 3 teaspoons
Garlic - 5 cloves
Coriander Powder - ½ a teaspoon
Cumin seeds - ½ a teaspoon
Salt to taste
Chilli powder - ½ a teaspoon
After thoroughly cleaning the fish, prepare the spice blend.
For this, dice the garlic then add in the dry ingredients - Lakadong turmeric, Ing Makhir ginger, coriander powder, cumin powder, and salt. Then add in the olive oil to the spice blend and squeeze some lemon juice.
Before you rub the spice blend on the fish, make some cuts on the outer layer of the fish. Make a slit in the middle of the fish where you can rub the spice blend and stuff in some lemon slices. Then rub in the spice blend on the fish until it is well coated.
Wrap the fish with the sla met (a local variety of leaves found in Meghalaya used a lot for food packaging here) or use a banana leaf. I had mistakenly said banana leaf in the video when it is actually slamet leaves that we used.
Put the wrapped fish over the heat for about 20mins until the fish is tender and beautifully cooked.
Enjoy it with some garnishes like onions, cucumber, tomatoes or any garnish of your choice.
