A simple recipe for flavourful, succulent potatoes!
½ a kg of potatoes peeled and cut into slices
2 large garlic cloves
4 large bay leaves
Freshly ground black pepper
½ a cup of vegetable stock
2 tablespoons of olive oil
You will need a nonstick pan or a casserole to fit in the potatoes.
Add olive oil and spread it evenly, ensuring the entire pan is covered with the oil.
Make a layer of the potatoes in the pot and add all the ingredients.
When it comes to the potatoes you can peel and slice them up, or you can leave the skin on but make sure you wash them well. Peel off one layer in line to let the flavours seep in.
Pour in the vegetable stock, bring to a simmer and cook covered over low heat until the potatoes are tender, and the liquid is absorbed for about 25-30minutes. Stir the potatoes at regular intervals till they're cooked.
